The holiday period can make you very overwhelming, especially if you’re surrounded by sweet-toothed children. Or adults. Especially adults! On Christmas days, everybody is craving for everything, especially cookies. Well, we’re not mentioning any real meals because this isn’t why we’re here!
Holiday period means ginger, a lot of ginger. And chocolate. And sweets, basically. It’s the only period that we’re allowing ourselves to get a bit crazy when it comes to food…sadly. It’s the only reason we’re expecting the first day of the Next Year, so we’ll promise ourselves to start exercising daily. Yeah right. But ok, we believe you. And us. We believe us. We can do it!
Anyway, let’s not think that much about the future, let’s stick it to the present, and start baking some goods!
Cinnamon Apple Pie
Our lesson is this: if there is no chocolate, get apples! Not a full substitute, obviously, but a it’s a win-win situation: it’s a healthier way to sweeten yourself up. And seriously now, who doesn’t love the classic apples and cinnamon combo?

We must confess: those are the first ginger cookies we’ve ever made! For real! All this ginger and gingerbread hype isn’t that spread around here, but this didn’t stop us to try those spicy, crunchy cookies, right?
They’re crunchy, tasty, spicy and absolutely irresistible! Spice up your baking knowledge by learning to bake those goodies here!
Chocolate Ginger Loaf
Chocolate Ginger Loaf was the first experiment we did during this irresistible dessert challenge. It’s an experiment only because we took the measurements from different kind of sweet loaves and cookies, and merging them together, by also adding the mighty ginger. You can also use this recipe to bake muffins. We didn’t do this, but we thought about it. Maybe on Christmas Eve’s morning!
Honestly, this was the fastest thing we’ve even done. The preparation only took us 10 minutes, while the cooking part 15, with medium heat, and maybe 20-23 minutes with low heat. Don’t believe us? Try it yourself! Recipe here.
Butter Gingerbread Cookies
This is the basic gingerbread recipe. In case you aren’t that sick, yet, from too much ginger, obviously! Gooey on the inside, cripsy on the outside, it’s perfect! Those are the same cookies I used for the Gingerbread Cake’ decorations. Basically, those are a must when it comes to the holiday period. The ginger taste is to die for, really! Here’s the recipe.

Gingerbread Cake with Mascarpone Cream
This is purely an experiment. We wanted to make a gingerbread cake itself, but didn’t know what kind of cream to use. We though that the classic vanilla cream would be too much and not that great for the taste merging. Then, we took a risk with the mascarpone cream. Nailed it! 😀 Try it out here!
So this is it! Those are our first 6 Christmas Recipes that we’re pride of. It was a hard challenge, even tiring, but well worth it.
